Yummy Carrot Cake

1 1/2 cups brown sugar
3/4 cup of LIGHT vegetable oil (can substitute 150g melted butter)
3 eggs
1 tsp pure vanilla essence
1 tsp cinnamon
1 tsp salt
1 tsp ginger (can substitute nutmeg)
1 tsp baking powder
1 tsp baking soda
2 cups flour
1 1/2 cups shredded carrot
1/2 cup chopped walnuts
1 tsp grated orange peel
juice of one orange

Cream butter and sugar.  Add eggs and mix.  Add sifted dry ingredients, vanilla essence, carrot, walnut, orange peel and juice.  Mix well.  Pour into lined cake tin and bake at 180 degrees until skewer comes out clean (for 35 - 45 minutes approx).

Turn out of tin, cool and ice with lemon and cream cheese icing.

I've written the recipe as I make it and the substitutions are my mums variations.  It's moist and yummy either way.
