Poltergeist pavlovas

COOKING for a once-a-year occasion might seem at the time to be a bit of a faff, but memories are made at meal times and that extra effort will undoubtedly serve to make someone's day.

Halloween is such an occasion. New Zealand might have come late to this party, but books, movies and television spreads the word among junior party-goers with the speed of light, and come October 31, the dressup set will be disguised as ghosts and ghouls and things that go bump in the night.

If the party is at your place, whip up a batch of ghostly meringues.

POLTERGEIST PAVLOVAS

The secret to soft, marshmallow- centred meringues is to use room- temperature eggs and to keep your eye on the oven. Do not let the meringues brown.


Ingredients:

  • 4 egg whites
  • 250g caster sugar
  • 2 tsp cornflour
  • 1 tsp vanilla essence
  • 1 tsp white vinegar
  • 1 Tbsp icing sugar
  • Black food colouring

Method:

  • Line two baking sheets with baking paper and heat oven to 180C.

  • Whisk eggs until they form soft peaks. Keep whisking while gradually adding the sugar until it's all in. Whisk until very stiff or your ghosts will collapse before reaching the oven.

  • Sift the cornflour over the top, add the vinegar and vanilla and fold through.

  • Prepare a piping bag, using a round nozzle. Pile the meringue into the bag, ensuring you fill all the gaps to prevent air bubbles. Hold the bag vertically above the baking sheet and squeeze the bag gently, lifting rather than swirling the bag to make a curl on the top.

  • Turn the oven down to 150°C and gently place trays in. Bake for 10 minutes then turn the oven off.

  • Leave in the oven for further 20 minutes then remove and allow to cool.

  • Mix the icing sugar with a drop or two of colouring and a couple of drops of water. Place small blobs to make eyes and a mouth on the wee ghostie faces.
