Basic pancake recipe

The basic pancake batter is one of the easiest to make.
You need:
1 cup flour
1 egg white
1 ¼ cup  milk
4 tbsp cold water
Beat together the flour, egg white, milk and water till smooth. To make the pancakes, heat a film of oil on a non-sticking pan. Put in about 3 tbsp of batter and tilt the pan around till the batter swirls around to cover the entire base of the pan. Cook for about 45 second till the base is set, then lifting the edges with a spatula, check if the base is evenly browned. If it has, shake the pan to loosen the pancake then flip the pan to turn it over.
This requires some finesse, so to begin with, turn it with a spatula.
Cook the other side for another 30 seconds, then slide onto a plate and fill with choice of filling.
Another option is to sprinkle fruits on the top before it sets completely. This is a healthy foods great breakfast idea.
Banana and mayple syrup pancake recipe

Make the pancake as above.
For the filling you need:
4 bananas, sliced
¼ cup maple syrup
Juice and rind of one lemon
Mix together these ingredients (except the rind) and simmer for about a minute.
Spoon onto the open pancakes and fold them into quarters. Sprinkle with the rind for garnish
Tropical fruits filled pancake recipe

For this pancake, the batter will vary slightly. In addition to the basic pancake ingredients you will need:
A pinch of grated nutmeg
A pinch of powdered cinnamon
1 tbsp fine desiccated coconut
These will be added to the basic batter. Then make the pancakes on a shallow pan sprayed with sunflower oil.
For the filling you will need:
1 cup cubed ripe mango
1 cup sliced bananas
2 kiwi fruits
1 tbsp lemon juice
1 tbsp honey
Mix all these together in a bowl and spoon onto the centre of the pancake. Fold over into a conical shape.
Apple and black currant pancake recipe

These pancakes are the basic recipe.
For the filling you will need:
½ kg cooking apples
2 cups black currants
2 tbsp demerara sugar
3 tbsp water
Peel and core the apples. In a pan, add the apples, currants and water, and cook for about 10 minutes over gentle heat. When the apples are soft, stir in the sugar. Cook the mixture a little more till the sugar dissolves and the fruit compote becomes thick.
Spoon onto the pancakes and fold over. Serve with fresh cream.
In the same manner, pancakes can have a filing made with dates, walnuts and honey (the two fruits copped and in equal proportion) as a filling.
Another good filing is cherry sauce. To make this sauce you need:
425 grams canned cherries (with the syrup)
½ tsp arrowroot
Remove the cherries from the syrup and keep aside. In a saucepan mix about two tablespoon of the syrup with the arrowroot till it dissolves completely. Then add the rest of the syrup and keep stirring on medium heat, till the syrup thickens and becomes clear. Then add the cherries to it and spoon this mixture onto the pancakes, folding them into quarters.
