SPANISH STEW WITH BANANASIngredients- 2 onions, sliced into rings
- ¼ chilli, finely-chopped
- 2 carrots, cut into thin slices
- 1 turnip, chopped
- 1 crushed clove of garlic
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons butter
- 1 teaspoon roasted ground coriander
- 450 grams (1 lb) thick-rib of mutton or pork
- juice of 1 orange
- 2 cups cooked dried-beans
- 3 bananas, sliced
- 2 cups tomato purée
Procedure- Fry the onion, chilli, carrot, turnip and garlic with the salt, pepper and coriander in butter.
- Add the meat and orange juice.
- Cover the saucepan and simmer slowly until the meat is nearly cooked.
- Add the beans, bananas and tomato, and cook for a further 20 minutes.
- A few spoons of cream added to the stew will improve the flavour.
- Serve with rice and a mixed salad.
Serves 4.

BANANA NUT LOAFIngredients- ⅓ cup butter
- ⅔ cup sugar
- 2 eggs
- 1¾ cups plain flour
- 2 teaspoons baking powder
- ¼ teaspoon bicarbonate of soda
- ½ teaspoon salt
- 1 cup mashed banana (approximately 4 bananas)
- 1 teaspoon vanilla essence
- ½ cup coarsely chopped mixed nuts
Procedure- Cream butter and sugar.
- Beat in the eggs, one at a time.
- Sift together the driy ingredients and stir it alternately, with the mashed banana, into the batter mixture.
- Stir in the vanilla essence.
- Fold the chopped nuts into the mixture.
- Bake in a loaf tin for 1 hour in a medium oven 180°C (350°F).
- Allow to cool and store in an airtight tin.
- This loaf is at its best after the third day of storage.
Yields 8-10 slices.

BANANA WAFFLESIngredients- 2 cups plain flour
- 4 teaspoons baking powder
- ½ teaspoon salt
- 2 eggs, separated
- 1¼ cups cold milk
- 6 tablespoons melted butter
- 1 cup mashed bananas
Procedure- Sift together the dry ingredients.
- Beat together the egg-yolks, milk and butter and stir into dry ingredients to form a thin batter.
- Fold in the stiffly-beaten egg-whites and the mashed banana.
- Bake in a waffle iron.
- Serve with syrup or honey and a teaspoon of whipped cream.
Makes 8-10 waffles.

BRANDIED BANANAS (BANANA FLAMBÉ)Ingredients- 10 bananas
- lemon juice
- castor sugar
- melted butter
- brandy
Procedure- Peel bananas and pack them in a row in a greased casserole.
- Sprinkle with lemon juice and castor sugar and pour over melted butter.
- Bake in a medium oven 180°C (350°F) until golden-brown.
- Pour over ½ glass of brandy, set alight, and bring flaming to the table.
- Serve with whipped cream.
Serves 5.

BANANA SUPREMEIngredients- 6 bananas
- 1½ tablespoons butter
- ⅛ teaspoon salt
- ½ cup sugar
- ½ cup dry white wine
- 1 tablespoon lemon juice
- 3 eggs, separated
Procedure- Cook the bananas in their skins until tender.
- Peel and mash.
- Melt butter, salt, and sugar in the warm mash.
- Stir in the wine, lemon juice and beaten egg yolks.
- Fold in the stiffly beaten egg white.
- Place in a greased casserole and bake for 25 minutes in a moderate oven 180°C (350°F).
Serves 4.

MIXED FRUIT PUNCHIngredients- grated rind of 4 lemons
- 5 cups sugar
- 10 cups boiling water
- 5 teaspoons tea leaves
- juice of 6 lemons
- juice of 7 oranges
- 3 cups grated pineapple
- 2 cups grapefruit juice
- 1 cup grapefruit segments
- 1 cup banana slices
- 1 cup strawberries
Procedure- Place in a saucepan the grated rind, sugar and 5 cups of boiling water.
- Boil for 5 minutes and strain.
- Pour the rest of the boiling water over the tea leaves.
- Leave for 5 minutes and strain, then chill.
- Combine all the ingredients.
- Taste in order to correct for sweetness.
- Add three bottles lemonade water if desired immediately before serving.
Yields approximately 24 glasses.

BRANDY LIQUEURIngredientsProcedure- Fill jam-jar three-quarters full with banana slices.
- Top up with brandy.
- Screw on air-tight lids and allow to stand for 1 month.
- Shake from time to time.
To Finish- Dissolve 2 cups sugar in ½ cup of water.
- Boil for 5 minutes, and allow to cool.
- Pour the banana and brandy through a sieve.
- Sweeten the brandy with syrup to taste.
- Fill bottles, cork and use.
This is a delicious liqueur.

FRESH FRUIT DRINKIngredients- 2 cups sugar
- 2 cups water
- 1 cup skinned seedless grapes
- 1 cup grated pineapple
- 1 cup sliced banana
- juice of 10 large oranges
- juice of 4 lemons
Procedure- Dissolve sugar in water and boil for 10minutes without stirring.
- Allow to cool.
- Stir in the fruit and fruit juice.
- Chill for 30 minutes in refrigerator.
- Serve with ice-cold soda water.
- This drink may be strained if desired.
Yields approximately 24 glasses.

QUICK BANANA CAKEIngredients- 2 cups plain flour
- 1 cup sugar
- 1 teaspoon bicarbonate of soda
- 1 teaspoon salt
- ⅓ cup soft shortening
- ½ cup butter — or sour milk
- 1 cup mashed banana
- 1 teaspoon vanilla essence
- ⅓ cup milk
- 1 egg
Procedure- Line two 20 cm (8-inch) cake tins with grease-proof paper and grease the base and sides.
- Place all ingredients except bananas in a mixing bowl.
- Beat for 3 minutes with a wooden spoon until the mixture is smooth and without lumps.
- Stir in mashed banana.
- Pour into prepared tins.
- Bake 25-30 minutes in a medium oven 180°C (350°F).
- Remove from oven.
- Leave in the tins for 3-5 minutes to cool slightly.
- Turn out and cool thoroughly.
- Use a tasty filling and decorate with whipped cream and sliced bananas.
Yields 8-12 portions.
