BANANA & GINGER TARTIngredients- 4 cups corn flakes
- 2 tablespoons sugar
- ⅓ cup soft butter (for pie case)
- 4 ripe bananas, mashed
- 2 tablespoons lemon juice
- 2 tablespoons butter (for filling)
- ¼ cup castor sugar
- 2 eggs, beaten
- ¼ cup chopped crystallised ginger
Procedure- Crush the corn flakes to crumbs and mixwith sugar and butter (for pie case).
- Press crumbs evenly over sides and bottom of a greased 23 cm (9 inch) pie dish.
- Cool thoroughly in the refrigerator.
- Place the banana, lemon juice, butter (for filling) castor sugar and eggs in the top of a double boiler.
- Heat and stir constantly until the mixture thickens.
- Remove from stove and fold in the ginger.
- Fill a pie shell with the mixture.
- Decorate with whipped cream.
Yields 12 portions.
