Salads are great, I tend to make a few salads at once and the family eat them over a couple of days. Great when the only thing you need to think about cooking is the meat.
I'm a carb-aholic , so don't expect super health salads, but filling and satisfying dishes that will impress people at the next BBQ.

Sushi Salad
Great if you love sushi, but hate the time consuming task of preparing individual rolls. This recipe has all the ingredients of traditional sushi - the only difference is the use of long grain rice to reduce the stickiness you find with Japanese rice. Because you need the rice to be cold, prepare the night before and the flavours will really develop.
1 cup of long grain rice 1/2 cups of water 2 Tablespoons Sushi wine vinegar 1 Tablespoon Sugar 2 sheets of Yaki Nori (seaweed sheets) cut into small cubes, say 1 - 2 cm cubes - I find scissors the best to cut the sheets 1/4 telegraph cucumber cubed 1/2 red pepper de-seeded and cubed 1/2 firm avacado cubed 4 - 5 pieces of pink pickled ginger finely sliced Sushi soysauce Wasabi
either 100 grams of smoked salmon or 100 grams of cubed cold skinless chicken breast or chicken fillets
Cook rice with water according to directions on the packet for the absorbtion method - which is generally bring to the boil for a minute, simmer for about 10 minutes and then stand for 10 mins.
Combine wine vinegar and sugar together until sugar is disolved. Add to hot rice and mix thoroughly. Transfer rice to a shallow tray to help it cool quicker.
Once rice is cold stir again to fluff the rice up and separate grains. Add Yaki Nori, cucumber, red pepper, avacado, pickled ginger and your choice of meat or fish and gently stir to combine.
For the dressing, combine soysauce and wasabi to taste. Serve on the side.

Easy Tuna Pasta Salad
300 grams of spiral pasta 1/2 cup mayonaise 2 Tablespoons tomato sauce 1 teaspoon lemon juice 1/2 teaspoon paprika 1/4 cup milk 1 x 185 gm tin of tuna in brine drained 1 spring onion finely sliced 1/2 red pepper de-seeded and sliced
Cook pasta according to directions on packet.
Combine mayonaise, tomato sauce, lemon juice, paprika and milk and mix until combined. Stir in flaked tuna, spring onion and red pepper, mix. Add cold pasta and mix until pasta is well coated.

Potato salad with Mustard and bacon dressing
500 grams salad potatoes cut into bite sized pieces 2 rashes of bacon cooked and finely sliced 1 spring onion finely sliced 1/2 cup mayonaise 1/4 cup Watties Bit on the Side Sweet Mustard Sauce
Bring potatoes to the boil and then remove from the heat. Allow them to sit in the hot water until tender, then drain off the hot water and stand until cool.
Combine rest of ingredients and mix through. Once potatoes are cold, stir into dressing until coated. Season with salt and peper to taste.
