I've done this a few times lately and they taste divine ...
Lamb Shanks Continental Stock Pot Beef (one pottle dissolved in 1 cup of boiling water) 2 Tablespoons Tomato Paste 1/2 cup red wine 1 teaspoon thyme 1 teaspoon oregano 4 cloves garlic
Put the lamb shanks into the crock pot. Mix the tomato paste into the beef stock and pour over the lamb shanks along with the red wine. Peel the garlic cloves and place them whole in the crock pot. Sprinkle the oregano and thyme over the lamb shanks - put the lid on and cook on slow for 8 hours.
If you can be bothered spoon the liquid over the shanks throughout the day. Sometimes I thicken the liquid and make it into gravy, sometimes I spoon some of the liquid over the shanks when I serve them and save the rest for another beef or mince casserole. Remove the cloves of garlic before dishing up - they have serveed their purpose.
Delicious served with mashed potato, baby peas and sliced carrots.
