Soak 1 kg of mixed fruit in 600mls of iced coffee milk overnight. Add 2 cups of SR flour and mix well. Put into cake tin lined with brown paper and cook in a moderate oven for about 1 1/2 hours or until a skewer inserted comes out clean.

No butter, not sugar and nothing else at all. I made this this morning and instead of one large tin I used to loaf pans. It is a very moist cake and rather delicious. Nothing else to be added at all Don.

Can't see why that wouldn't work Shef. It would probably work using fruit nectar too... must give that a go. Soak the fruit in apricot nectar. Did hear of one with cold tea,,will try find the recipe.
