Banana Cake - SO easy and very yummy too!

1.1 cup wholemeal flour
2.1 cup flour
3.2 teaspoons baking soda
4.1 cup raw sugar
5.1/4 teaspoon salt
6.2 teaspoons spice (ginger and cinnamon are nice but this is optional)
7.1 cup cooking oil
8.4 eggs
9.3 bananas, roughly mashed (but you can use any kind of cut up fresh fruit, 3 cups) Rough mash banana if you like a few banana lumps in it....

*NOTE* If the bananas are going black all the better as yields a much richer banana flavour, just squish them through the mix.

1.Mix oil, eggs and the soda which has been dissolved in a tablespoon of boiling water. Sift flours and spices and salt then mix in sugar.

2.Add the oil mix and fruit and stir together.

3.Cook in a big cake tin for about one hour at 180C. Or nuke approx 11 mins on med in a donut shaped plastic cake ring, or place an upside down cup in the centre of a round nuke proof dish to ensure all round cooking

Ice with cream cheese icing, or coffee, passionfruit, chocolate or lemon flavoured icing, all of which are divine on banana cake!

That's 3 banabas and 4 eggs. a wee bit more flour can be added if you feel it is a bit sloppy but be carefull as eggs will set up cake when cooking. and remember wholemeal flour is absorbent, the oil can be replaced with same qty of butter for a much richer cake (my preference)
