Title: Banana Recipes — “Be Bold With Bananas”

Be Bold With Bananas is the title of a Banana Recipe Book that was given away as part of a supermarket promotion over twenty-five years ago. This book contains more than 100 recipes that use bananas as one of the ingredients. It contains recipes for Main Dishes, Side Dishes, Salads, Desserts, Baking, Tarts, Drinks, Jam, Chutney and Sauce.

Over the years, I have used many of the recipes from the book and the purpose of this thread is to share some of them with members and visitors to this group.

Be aware that this recipe book uses imperial measures, but where possible, I have shown approximate metric conversions. Remember that 1 Standard Imperial Cup = 225 ml, whereas 1 Standard Metric Cup = 250 ml. Likewise, 1 ounce = approximately 28 grams and 1 pound = approximately 450 grams. Where metric conversions have been shown, the original imperial measures are displayed in brackets.

BANANA BREAD PUDDING

Ingredients

  • 4 bananas, peeled and sliced
  • juice and grated rind of 1 lemon
  • 2 thick slices of bread, buttered
  • ¼ cup smooth apricot jam
  • 2 eggs
  • 1 cup milk
  • ¼ cup sugar
  • ½ teaspoon mixed spice
  • 1 tablespoon butter

Procedure

  • Mix the banana, lemon juice and grated rind.
  • Cut bread into cubes.
  • Place alternate layers of bread, bananas and jam in a greased casserole.
  • Beat the egg, milk, sugar and mixed spice and pour it over the pudding.
  • Dot with butter.
  • Allow to soak for 15 minutes.
  • Bake in a moderate oven 180°C (350°F) for 30 minutes.
  • Serve with a custard or a tasty sauce.

BANANA CHICKEN

Ingredients

  • 1 chicken
  • flour
  • 6 rashers bacon
  • 3 large bananas
  • ¼ cup lemon juice
  • 1 tablespoon butter
  • salt and pepper to taste

Procedure

  • Prepare the chicken.
  • Sprinkle with salt and pepper and rub in a little flour.
  • Cover the breast with the bacon.
  • Peel the bananas and quarter, dip in lemon juice and place inside the chicken.
  • Pour over remaining lemon juice and dot with butter.
  • Wrap in foil and bake for 2 hours in a medium oven 190°C (375°F) or until meat is tender.
  • Fold back foil and allow chicken to brown.

Serves 6-8.

BANANA MEAT LOAF

Ingredients

  • 900 grams (2 lb) minced meat
  • 1 tablespoon chopped onion
  • 2 teaspoons salt
  • ¾ teaspoon pepper
  • 2 thick slices bread, soaked in water
  • 1½ cups mashed banana (about 5 bananas)
  • 2 teaspoons prepared mustard
  • 3-4 hard-boiled eggs

Procedure

  • Mix together all the ingredients except the eggs.
  • Place half the meat mixture in a greased loaf-tin.
  • Shell the hard-boiled eggs and arrange, lengthwise, down the centre of the dish.
  • Add the rest of the meat mixture and press down firmly.
  • Bake for 1 hour in a moderate oven 180°C (350°F)
  • This loaf can be eaten hot or cold and should be sliced before serving.

Yields 10-15 slices.

POTATO & BANANA NESTS

Ingredients

  • 6 bananas
  • 2 tablespoons lemon juice
  • 2 tablespoons melted butter
  • 1 tablespoon apricot chutney
  • ¼ teaspoon salt
  • mashed potato

Procedure

  • Mash bananas and mix with the lemon juice, butter, chutney and salt.
  • Cook for approximately 7-10 minutes, stirring constantly.
  • Pipe mashed potato in round or oval nests.
  • Fill each nest with 1 tablespoonful of the banana mixture.

Serves 3-6.

BANANA CRUMPETS

Ingredients

  • 1½ cups plain flour
  • 1½ teaspoons baking power
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 2 eggs
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 cup chopped bananas
  • ¼ cup lemon juice
  • ½ cup sweetend, whipped cream

Procedure

  • Sift together the dry ingredients.
  • Beat the eggs, add the milk, butter and dry ingredients and mix until smooth.
  • The batter should have the consistency of thick cream.
  • Place teaspoonfuls in a slightly greased hot frying pan, leave room for spreading.
  • When bubbles appear, turn quickly with a knife and brown other side.
  • Place a tablespoonful of chopped banana sprinkled with lemon juice in the middle of each crumpet.
  • Push a cherry in at the top end of a toothpick and pin the two opposite sides of the crumpet together with the other end of the toothpick.
  • Squirt a starlet of cream into the opposite openings thus formed.

Makes about 15 crumpets.

CURRIED BANANA

Ingredients

  • 2 onions, chopped
  • 2 tablespoons butter
  • 1 tablespoon curry powder (or to taste)
  • 1 cooking apple, peeled and coarsely grated
  • 1 tablespoon apricot jam
  • 2½ tablespoons vinegar
  • ¼ teaspoon salt
  • 1 cup water
  • 4 bananas

Procedure

  • Brown the onion in butter.
  • Stir in the curry powder and fry for a few minutes longer.
  • Add remaining ingredients, except bananas.
  • Cover pan and cook gently for approximately 10 minutes.
  • Halve the bananas lengthwise and pack them in sauce.
  • Cook gently for a further 10 minutes.
  • Arrange bananas in the centre of a serving dish, surround with cooked rice and hard-boiled egg-halves.
  • Garnish with tomato and green-pepper rings.

Serves 2.

BANANA SAUSAGES

Ingredients

  • 6 bananas
  • ¼ cup lemon juice
  • 6 Vienna sausages
  • 6 rashers bacon
  • 6 pineapple rings

Procedure

  • Peel the bananas and dip them in lemon juice.
  • Cut each banana in half lengthwise, and place a sausage between the two halves.
  • Wrap a rasher of bacon round each banana sandwich and secure with a wooden toothpick.
  • Cut a hole in the centre of each pineapple ring, and press a banana-sausage into each.
  • Place on a greased baking dish under the grill for 5 to 7 minutes.
  • Serve for lunch or dinner.

Serves 6.

FRIED BANANAS

  • 6 bananas
  • 1 egg
  • ½ cup fine breadcrumbs
  • ½ teaspoon salt

Procedure

  • Cut bananas into 2.5 cm (1 inch) slices.
  • Dip into the slightly beaten egg and salt, and roll in breadcrumbs.
  • Deep fry in hot fat or oil until brown.
  • Drain on absorbent paper and serve hot.

Serves 3.

INSTANT BANANA PUDDING

Ingredients

  • 6 bananas
  • ½ cup cinnamon-sugar
  • 2 tablespoons butter

Procedure

  • Slice bananas lengthwise and place in abuttered casserole.
  • Sprinkle generously with cinnamon-sugar and dot with butter.
  • Bake for 20-25 minutes in a moderate oven 180°C (350°F).
  • Half a cup of orange juice and one cup of coconut may be poured over before baking if desired.
  • Serve hot with custard.

Serves 3-4.

BANANA CUSTARD

Ingredients

  • 2½ tablespoons cornflour
  • ¼ cup sugar
  • ¼ teaspoon salt
  • ½ cup cold milk
  • 1½ cups boiled milk
  • 2 eggs, separated
  • 5 bananas, quartered
  • ¼ cup lemon juice

Procedure

  • Mix together the cornflour, sugar, saltand cold milk until it forms a smooth paste.
  • Stir in the boiling milk and pour into a saucepan.
  • Bring to the boil, and boil for 3 minutes, stirring constantly.
  • Beat egg yolk, add a little of the boiling mixture and return to the saucepan.
  • Boil again.
  • Remove from heat.
  • Dip bananas in lemon juice and stir into the custard.
  • Beat egg whites until stiff and fold into the custard.
  • Serve in a glass bowl.
  • Decorate with banana slices, dipped in lemon juice, halved cherries and mint leaves.

Serves 4.

BANANA JELLY

Ingredients

  • 1½ packets red jelly
  • ¾ cup boiling water
  • ¼ cup sweet red wine
  • 1½ cups milk
  • 6 ripe bananas
  • 2 tablespoons sugar

Procedure

  • Dissolve jelly in boiling water and allow to cool.
  • Stir in the wine and milk.
  • Mash bananas and blend with sugar.
  • Fold mashed bananas into jelly as soon as the jelly begins to set.
  • Pour into a mould which has been rinsed in cold water.
  • Allow to set.
  • Un-mould and decorate with banana slices and cream.

Serves 5-6.

BANANA DUCK IN ORANGE SAUCE

Ingredients

  • 3 tablespoons lemon juice
  • 1 medium duck
  • salt and pepper to taste
  • 2 cups orange juice
  • ¼ cup rum (optional)
  • 2 tablespoons grated orange rind
  • 2 bay leaves or lemon leaves
  • 3 bananas, sliced

Procedure

  • Sprinkle the lemon juice on the outside and the inside of the duck.
  • Rub in the salt and pepper.
  • Place in a casserole.
  • Roast in a warm oven 215°C (425°F) for 30 minutes, basting from time to time with its own fat.
  • Reduce heat to 180°C (350°F) and continue cooking for another hour.
  • Drain off the fat.
  • Add orange juice, orange rind, bay leaves (or lemon leaves) and rum to the duck.
  • Continue roasting in a medium oven until the duck is tender and brown.
  • Baste continually with the sauce.
  • For a particularly grand sauce, add 1 tablespoon chopped nuts and 1 tablespoon Van der Hum liqueur.

Serves 6.

BANANA FRITTERS

Ingredients

  • 1 cup plain flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 tablespoon sugar
  • 1 egg, beaten
  • ¾ cup milk
  • 1 tablespoon melted butter
  • ripe bananas

Procedure

  • Mix the flour, baking powder, salt and sugar in a mixing bowl.
  • Make a hollow in the centre and pour in the rest of the ingredients excluding the bananas.
  • Slowly stir to form a smooth batter.
  • Use small ripe bananas - halve them lengthwise, and sprinkle with lemon juice.
  • Dip into the batter, making sure that the entire banana is covered.
  • Deep fry in hot oil for approximately 3 minutes until golden brown.
  • Drain, then dust with castor sugar.
  • Serve with honey and lemon wedges or cinnamon-sugar.

Makes about 12 fritters.

BANANA NUT CAKE

Ingredients

  • 1½ cups plain flour
  • ½ cup sugar
  • ½ teaspoon baking powder
  • ¾ teaspoon bicarbonate of soda
  • ¼ teaspoon salt
  • ½ cup soft butter
  • cup plain butter or sour milk
  • 1 cup banana, mashed
  • 2 eggs
  • 1 teaspoon vanilla essence
  • cup chopped nuts

Procedure

  • Sift together the dry ingredients.
  • Beat together the remaining ingredients, except the nuts, and stir gradually into the dry ingredients.
  • Fold in the nuts.
  • Line the base of two 20 cm (8 inch) cake tins with grease-proof paper.
  • Grease the paper as well as the sides.
  • Spoon in the mixture.
  • Bake for 30 minutes in a moderate oven 180°C (350°F).
  • Turn out, allow to cool, fill and decorate to taste.

Yields about 12 slices.

BANANA MUESLI

Ingredients

  • 2 tablespoons lemon or orange juice
  • ½ cup sliced banana
  • 2 ripe apples, coarsely grated
  • 4 tablespoons oats
  • 4 tablespoons condensed milk
  • ½ teaspoon grated lemon rind
  • cup water
  • 2 tablespoons chopped nuts

Procedure

  • Pour the lemon juice over banana and apple, stir well.
  • Mix with the remaining ingredients and beat thoroughly with a wooden spoon.
  • The mixture should be light and creamy.
  • Spoon into individual bowls, sprinkle with chopped nuts and decorate with banana slices.
  • Whipped cream may be added.

Serves 1-2.

BANANAS & HAM

Ingredients

  • 3 bananas
  • 1 tablespoon lemon juice
  • 6 slices ham
  • 1 tablespoon prepared mustard

Cheese Sauce Ingredients

  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ teaspoon salt
  • pinch cayenne pepper
  • 1 cup milk
  • ½ cup grated Cheddar cheese

Procedure

  • Peel the bananas and cut in half, lengthwise.
  • Dip each banana slice in lemon juice to prevent discoloration.
  • Spread prepared mustard on one side of each slice of ham and, with the mustard on the inside, roll round the banana halves.
  • Secure with toothpicks.
  • Arrange the banana rolls in a greased baking dish and cover with cheese sauce.

Cheese Sauce Procedure

  • Melt the butter in a saucepan and stir in the dry ingredients.
  • Add the milk and bring to the boil stirring constantly.
  • When sauce is smooth and thickened, stir in the grated cheese.

To Finish

  • Pour the sauce over the ham rolls.
  • Bake in a moderate oven 180°C (350°F) until brown — approximately 15 minutes.
  • Serve for lunch with a mixed salad.

  • Variation — Instead of the cheese sauce, cover the ham rolls with a tin of sweetcorn.
  • Sprinkle the top with grated cheese before browning.

ICED BANANA

Ingredients

  • 6 ripe bananas
  • 4 tablespoons castor sugar
  • juice of 1 orange
  • juice of ½ lemon
  • ½ cup cream, whipped
  • ½ cup custard, made with egg yolk
  • 2 egg whites

Procedure

  • Mash bananas with sugar.
  • Mix it with cream and cold custard.
  • Fold it into the stiffly beaten egg white.
  • Spoon into ice trays and allow to freeze.
  • Use as an ice-cream.

BANANA FLAN

Ingredients

  • 1 cup plain flour
  • 2 teaspoons baking powder
  • ½ cup milk
  • 1 tablespoon butter
  • 2 eggs, separated
  • 1 cup sugar
  • 1 teaspoon vanilla essence

Filling Ingredients

  • 10 ripe bananas
  • 1 tin sweetened condensed milk
  • ½ cup walnuts
  • 2 tablespoons sugar
  • 2 tablespoons lemon juice

Procedure

  • Mix dry ingredients.
  • Boil milk and add butter to it.
  • Beat the egg-yolks together with 2 tablespoons of the milk.
  • Add sugar and beat thoroughly.
  • Fold in the dry ingredients and stir into the milk mixture.
  • Beat the egg whites until stiff and fold it with the vanilla essence into the mixture.
  • Pour into 2 very small or 1 large greased flan tin and bake 20 minutes in a warm oven 200°C (400°F).

Filling Procedure

  • Caramelize the sweetened condensed milk by boiling the tin for 2-3 hours in water.
  • Slice the bananas and sprinkle them with the sugar and lemon juice.
  • Mix the banana and sweetened condensed milk and pour into the cold flan cases.
  • Sprinkle with chopped walnuts.
  • Chill and decorate with whipped cream and cherries.

Yields about 12 portions.

MIXED BANANA SALAD

Ingredients

  • 2 cooked potatoes, diced
  • 1 diced, small cucumber
  • 1 cup cooked peas
  • 1 slice pineapple, coarsely chopped
  • 1 banana, sliced
  • ½ cup cayenne pepper
  • 1 teaspoon salt
  • lettuce
  • tomato

Procedure

  • Mix together the vegetables and fruit.
  • Season with salt and cayenne pepper.
  • Moisten with mayonnaise.
  • Place spoonfuls on individual lettuce leaves.
  • Garnish with strips of red tomato and serve with more mayonnaise.

Serves 2.

BANANA CANDLES

Ingredients

  • 3 bananas
  • 2 tablespoons lemon juice
  • 6 pineapple rings
  • 2 tablespoons mayonnaise
  • 3 glacé cherries

Procedure

  • Halve the bananas crosswise, dip in lemon juice and place each half, end uppermost, in a pineapple ring.
  • Drip mayonnaise down the sides of the bananas.
  • Using a toothpick, fix half a cherry on top of each banana.
  • It will resemble a burning candle in its holder.
  • Place each “banana candle” on a small plate, lined with lettuce leaves.
  • Orange slices can be used instead of pineapple rings.

Serves 6.

BARBECUE BANANAS

Ingredients

  • bananas
  • brown sugar
  • cinnamon
  • nutmeg
  • butter

Procedure

  • Place each peeled banana on a square of heavy aluminium foil.
  • Squeeze over lemon juice, and sprinkle generously with brown sugar.
  • Dust lightly with cinnamon and nutmeg.
  • Dot with butter.
  • Wrap each banana securely in its foil, neatly sealing the ends.
  • Grill for 7-9 minutes alongside the meat over the embers.
  • Serve in foil.

CRUMBED BANANAS

Ingredients

  • 1 egg
  • ¼ teaspoon salt
  • 3 bananas
  • 1 tablespoon lemon juice
  • breadcrumbs

Procedure

  • Whisk the egg throughly.
  • Stir in the salt and lemon juice.
  • Halve the bananas lengthwise and dip in egg.
  • Roll in breadcrumbs.
  • Deep fry for approximately 2 minutes.
  • Dish up immediately with meat.

Serves 2.

BANANA FOAM

  • 1 tin sweetened condensed milk
  • juice of 1 lemon
  • 4 ripe bananas

Procedure

  • Stir in the sweetened condensed milk, lemon juice and mashed bananas.

  • 2 medium-sized onions, sliced
  • 1 clove garlic
  • 2 tablespoons curry powder (or to taste)
  • 900 grams (2 lb) chuck steak or chicken
  • 6 peppercorns

Procedure

  • Heat the butter or fat in a saucepan.
  • Add the onion and garlic and brown slightly.
  • Stir in the curry powder and allow to cook for a few more minutes.
  • Cut the meat into portions and place in a casserole together with the peppercorns and bay leaves.
  • Add the curry mixture.
  • Add the water, cover and cook for 2 hours at 150°C (300°F).
  • Remove the casserole from the oven and stir in the remaining ingredients.
  • Cook for a further hour.
  • Serve with rice, apricot chutney and a tomato salad.

  • ¾ teaspoon cinnamon

  • 1 cup mashed banana (3-4 bananas)
  • ½ cup chopped nuts

Procedure

  • Sift the flour, bicarbonate of soda andsalt together.
  • Cream the butter or margarine and sugar, and add the egg.
  • Beat thoroughly.
  • Stir in the oats, bananas, and nuts.
  • Stir in the dry ingredients.
  • Place the dough using two teaspoons about 4 cm (1½ inches) apart on an ungreased baking tray.
  • Bake for 15 minutes in a hot oven 200°C (400°F).
  • Remove the cookies from the tray and let cool on a cake rack.

Makes about 24 cookies.

BANANA JAM

Ingredients

  • 12 fairly ripe bananas, approximately 1120-1345 grams (2½-3 lbs) when peeled
  • 4 cups sugar
  • ¾ cup lemon juice
  • ½ teaspoon salt

Procedure

  • Peel and slice the bananas.
  • Arrange alternate layers of bananas and sugar in a preserving pan.
  • Sprinkle over with lemon juice and salt.
  • Leave for about 1 hour to form a syrup.
  • Heat very slowly to prevent burning.
  • Boil for approximately 20-25 minutes.
  • Test as for jam.
  • Bottle when hoiling hot, in sterilized jars.
  • Seal/screw the lids on immediately.

   Banana Chutney (3) —

  • 36 bananas
  • 3 onions
  • 2 cloves garlic
  • 3 green peppers
  • 225 grams (½ lb) sultanas
  • 1 bottle vinegar
  • ¼ teaspoon mace
  • 2 teaspoons ground ginger
  • 1 tablespoon salt
  • 1½ teaspoons ground cinnamon

Procedure

  • Mince fruit and vegetables.
  • Cook together with the remaining ingredients until it forms a thick pulp.
  • Stir frequently to prevent burning.
  • Spoon the mixture, boiling hot into jars and seal.
  • The chutney should not come into contact with a metal lid.
  • Place wax paper between lid and jar.
  • Delicious served with cold meat, curries, or as a sandwich filling.

PRESERVED BANANAS

Ingredients

  • 1½ cups sugar
  • 1 cup water
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt
  • 6-8 bananas

Procedure

  • Dissolve sugar in water and bring to boil.
  • Stir in the lemon juice and salt.
  • Peel bananas and slice into rounds or lengths.
  • Place the bananas in boiling syrup and cook without lid for 5-7 minutes - depending on the ripeness of bananas.
  • The bananas must not disintegrate.

   Meanwhile sterilize the jars and lids as follows —

  • Place the clean jars and lids in a cold oven.
  • Turn oven on to 125°C (250°F) and leave for at least 15 minutes to heat thoroughly.
  • Use new rings and sterilize by pouring boling water over them.
  • Use a dry cloth to remove each jar from the oven.

To Finish

  • Fill jar with bananas, pour on syrup until it overflows.
  • Place a ring on jar and screw tight.

Makes about 1200 ml (2 pints) of preserved bananas.

Meringue Shell Ingredients

  • 4 egg whites
  • ⅛ teaspoon salt
  • ½ cup sugar
  • ⅛ teaspoon cream of tartar

Filling Ingredients

  • 1 packet instant caramel pudding
  • 2 cups milk
  • 6 ripe bananas, sliced
  • ⅛ teaspoon salt

Procedure

  • Using a pencil, raceon grease-proof paper a circle of 20 cm (8 inches) in diameter.
  • Do not use butter or wax paper, as it sticks.
  • Grease the paper with oil and dredge with flour.
  • Beat the egg whites until frothy.
  • Add salt and cream of tartar and beat again.
  • Add the sugar gradually, beating all the while.
  • Beat until stiff.
  • The last of the sugar will have to be folded in, since the mixture will now be too stiff to beat further.
  • Spoon the mixture into a forcing bag with a star tube at the end and squeeze the meringue over the pencil line.
  • Fill the inside with a meringue layer 1.5 cm (½ inch) thick.
  • Pipe a wreath of continuous stars all along the edge over the first layer to form the edge of the shell.
  • Bake 2-2½ hours in a very cool oven 125°C (250°F)  until the meringue shell has dried out all round.
  • Place on a plate and fill with the filling.

Filling Procedure

  • Make the caramel pudding, using the milk, according to the instructions on the packet.
  • Fold in the banana and salt.
  • Leave to cool.
  • Spoon the filling into the shell when required.
  • Decorate with banana slices, green and red cherries, and cream rosettes.

Yields 8 slices.

  • Allow to cool until mixture begins to set.

  • ¼ cup walnuts, halved

Procedure

  • Press the walnut halves into this, to form a pattern.
  • Sift together the flour, the baking powder and the salt and cut in the remaining butter with a knife.
  • Rub it in lightly with finger-tips.

  • Roll the dough into an oblong on a floured pastry board, approx 50 cm (20 inches) long and 25 cm (10 inches) wide.

  • Roll up like a jam roll.
  • Press ends together and cut the roll into 20 2.5 cm (1 inch) slices.

  • Bake for 30 minutes in a warm oven 215°C (425°F), until golden-brown.
  • Turn out and serve warm with coffee.

  • Pour the lemon juice over banana slices.
  • Grease a casserole with butter and arrange alternate layers of sweet potato (kumara) and banana.
  • Sprinkle with sugar, season with salt, and dot with butter.
  • Top with a layer of sweet potatoes (kumaras).
  • Pour over the boiling water and bake 35 minutes in a moderate oven 180°C (350°F).

PORK CUTLETS WITH BANANAS

Ingredients

  • 4 pork cutlets
  • 1 tablespoon oil
  • 4 cloves
  • 2 bananas, sliced
  • 1 tablespoon butter
  • 2 sweet potatoes (kumaras), peeled and sliced
  • 2 tablespoons brown sugar

Sauce Ingredients

  • ¾ cup tomato purée
  • 2 tablespoons lemon juice
  • 1 finely chopped onion
  • 1 tablespoon Worcestershire sauce
  • salt to taste

Procedure

  • Mix together all sauce ingredients.
  • Marinate the cutlets in the sauce for 1-2 hours.
  • Insert a clove into each cutlet.
  • Place the cutlets in a casserole, greased with oil.
  • Cover with the bananas and sweet potatoes (kumaras).
  • Sprinkle with sugar, dot with butter and bake in a moderate oven 180°C (350°F) until the meat is brown and tender.

Serves 4.

SPANISH STEW WITH BANANAS

Ingredients

  • 2 onions, sliced into rings
  • ¼ chilli, finely-chopped
  • 2 carrots, cut into thin slices
  • 1 turnip, chopped
  • 1 crushed clove of garlic
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons butter
  • 1 teaspoon roasted ground coriander
  • 450 grams (1 lb) thick-rib of mutton or pork
  • juice of 1 orange
  • 2 cups cooked dried-beans
  • 3 bananas, sliced
  • 2 cups tomato purée

Procedure

  • Fry the onion, chilli, carrot, turnip and garlic with the salt, pepper and coriander in butter.
  • Add the meat and orange juice.
  • Cover the saucepan and simmer slowly until the meat is nearly cooked.
  • Add the beans, bananas and tomato, and cook for a further 20 minutes.
  • A few spoons of cream added to the stew will improve the flavour.
  • Serve with rice and a mixed salad.

Serves 4.

BANANA NUT LOAF

Ingredients

  • cup butter
  • cup sugar
  • 2 eggs
  • 1¾ cups plain flour
  • 2 teaspoons baking powder
  • ¼ teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • 1 cup mashed banana (approximately 4 bananas)
  • 1 teaspoon vanilla essence
  • ½ cup coarsely chopped mixed nuts

Procedure

  • Cream butter and sugar.
  • Beat in the eggs, one at a time.
  • Sift together the driy ingredients and stir it alternately, with the mashed banana, into the batter mixture.
  • Stir in the vanilla essence.
  • Fold the chopped nuts into the mixture.
  • Bake in a loaf tin for 1 hour in a medium oven 180°C (350°F).
  • Allow to cool and store in an airtight tin.
  • This loaf is at its best after the third day of storage.

Yields 8-10 slices.

BANANA WAFFLES

Ingredients

  • 2 cups plain flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 2 eggs, separated
  • 1¼ cups cold milk
  • 6 tablespoons melted butter
  • 1 cup mashed bananas

Procedure

  • Sift together the dry ingredients.
  • Beat together the egg-yolks, milk and butter and stir into dry ingredients to form a thin batter.
  • Fold in the stiffly-beaten egg-whites and the mashed banana.
  • Bake in a waffle iron.
  • Serve with syrup or honey and a teaspoon of whipped cream.

Makes 8-10 waffles.

BRANDIED BANANAS (BANANA FLAMBÉ)

Ingredients

  • 10 bananas
  • lemon juice
  • castor sugar
  • melted butter
  • brandy

Procedure

  • Peel bananas and pack them in a row in a greased casserole.
  • Sprinkle with lemon juice and castor sugar and pour over melted butter.
  • Bake in a medium oven 180°C (350°F) until golden-brown.
  • Pour over ½ glass of brandy, set alight, and bring flaming to the table.
  • Serve with whipped cream.

Serves 5.

BANANA SUPREME

Ingredients

  • 6 bananas
  • 1½ tablespoons butter
  • ⅛ teaspoon salt
  • ½ cup sugar
  • ½ cup dry white wine
  • 1 tablespoon lemon juice
  • 3 eggs, separated

Procedure

  • Cook the bananas in their skins until tender.
  • Peel and mash.
  • Melt butter, salt, and sugar in the warm mash.
  • Stir in the wine, lemon juice and beaten egg yolks.
  • Fold in the stiffly beaten egg white.
  • Place in a greased casserole and bake for 25 minutes in a moderate oven 180°C (350°F).

Serves 4.

MIXED FRUIT PUNCH

Ingredients

  • grated rind of 4 lemons
  • 5 cups sugar
  • 10 cups boiling water
  • 5 teaspoons tea leaves
  • juice of 6 lemons
  • juice of 7 oranges
  • 3 cups grated pineapple
  • 2 cups grapefruit juice
  • 1 cup grapefruit segments
  • 1 cup banana slices
  • 1 cup strawberries

Procedure

  • Place in a saucepan the grated rind, sugar and 5 cups of boiling water.
  • Boil for 5 minutes and strain.
  • Pour the rest of the boiling water over the tea leaves.
  • Leave for 5 minutes and strain, then chill.
  • Combine all the ingredients.
  • Taste in order to correct for sweetness.
  • Add three bottles lemonade water if desired immediately before serving.

Yields approximately 24 glasses.

BRANDY LIQUEUR

Ingredients

  • banana slices
  • brandy

  • 2 cups sugar
  • ½ cup water

Procedure

  • Fill jam-jar three-quarters full with banana slices.
  • Top up with brandy.
  • Screw on air-tight lids and allow to stand for 1 month.
  • Shake from time to time.

To Finish

  • Dissolve 2 cups sugar in ½ cup of water.
  • Boil for 5 minutes, and allow to cool.
  • Pour the banana and brandy through a sieve.
  • Sweeten the brandy with syrup to taste.
  • Fill bottles, cork and use.

This is a delicious liqueur.

FRESH FRUIT DRINK

Ingredients

  • 2 cups sugar
  • 2 cups water
  • 1 cup skinned seedless grapes
  • 1 cup grated pineapple
  • 1 cup sliced banana
  • juice of 10 large oranges
  • juice of 4 lemons

Procedure

  • Dissolve sugar in water and boil for 10minutes without stirring.
  • Allow to cool.
  • Stir in the fruit and fruit juice.
  • Chill for 30 minutes in refrigerator.
  • Serve with ice-cold soda water.
  • This drink may be strained if desired.

Yields approximately 24 glasses.

QUICK BANANA CAKE

Ingredients

  • 2 cups plain flour
  • 1 cup sugar
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • cup soft shortening
  • ½ cup butter — or sour milk
  • 1 cup mashed banana
  • 1 teaspoon vanilla essence
  • cup milk
  • 1 egg

Procedure

  • Line two 20 cm (8-inch) cake tins with grease-proof paper and grease the base and sides.
  • Place all ingredients except bananas in a mixing bowl.
  • Beat for 3 minutes with a wooden spoon until the mixture is smooth and without lumps.
  • Stir in mashed banana.
  • Pour into prepared tins.
  • Bake 25-30 minutes in a medium oven 180°C (350°F).
  • Remove from oven.
  • Leave in the tins for 3-5 minutes to cool slightly.
  • Turn out and cool thoroughly.
  • Use a tasty filling and decorate with whipped cream and sliced bananas.

Yields 8-12 portions.
